You can boil them, but leave them whole with a little bit of the stem still attached (else the red bleeds out along with many of the nutrients)for about twenty minutes. Slice and serve with salt/pepper and butter. Yum!
Also the salad with cooked, sliced beets, mixed spring greens, blue cheese, dried cranberries, and candied almonds. Add a celery seed (or poppyseed) dressing.
You have all inspired me to try fresh beets. The only way I have ever had them is from a can, and I have always hated them.. This is why Sarah has no idea what to do with them. Now, about those zucchini... Cindy

Slice them, throw them in a bowl with some balsamic and olive oil. Let sit for an hour while stirring on occasion - awesome!
